Traditional Balsamic Vinegar and Balsamic Vinegar of Modena are two separate products. Traditional Balsamic Vinegar of Modena is a D.O.P. product produced from the fermentation in to vinegar of only Cooked grape must (or grape juice) for a minimum of 12 years and then must be inspected and certified and packed by the consortium for Traditional Balsamic Vinegar of Modena as a D.O.P. product. The two varieties of the product consist of that of Modena and Reggio Emilia. Modena’s Traditional Balsamic Vinegar offers a “Vecchio” 12 year (burgundy cap) and a “Extravecchio” 25 Year (Gold Cap). Reggio Emilia’s product is offered in a 12 year (Red Seal), a 25 Year Silver Seal, and an “Over 25 Year (Gold Seal).
